Lot of times in Italy. They do use the boars over the sows when they cook with wild pigs I have an uncle who loves it when I shoot warhogs cuz unless they're small I don't mess with them but I want them off our property which won't ever happenBest LASAGNA I ever had was made with wild boar...(Unfortunately this was in Italy...so)
Im with Lee, hard to beat wild game with some taters. I cook venison in red wine, add about a quarter inch of wine in a pan, bring it to boil and reduce the liquid down till it's almost gone the reduce the heat. Add about a tbs of oil and cook for about 3 minutes on both sides or till medium rare then serve including mashed potatoes with minced garlic mixed in adding a side of fried Brussels sprouts for veggiesI just whipped up a batch of venison chili that turned out surprisingly good! What's your go-to recipe for using up your game meat?
