I've been on the hunt for some quick and easy weeknight dinners, so I thought I'd reach out for ideas! What's your go-to recipe for a busy evening? I'd love to hear your favorites and maybe pick up a tip or two along the way. If you have a picture, I'd love to see it!
 
I don't know if this is really fast, but it is really easy.

I saw a can of "Mexican beans and corn" - at least I think that's what it was called - at the store and bought it. It was quite good. It was also about two and a half dollars for a can of vegetables which I thought was outrageously expensive

But I decided it looks simple enough that I could make it. I got a can of Mexicorn (only people I am aware of that make that is green giant, but it's basically just sweet corn with some chopped up red and green bell pepper) and a can of pinto beans, and added a little bit of garlic powder and a little bit of cumin and a little bit of oregano (because oregano makes just about everything better). And I put in some chopped onion. I used dried onion but there's enough moisture in this to rehydrate it. And I stirred it all up in a big bowl and stuck in the refrigerator for a couple hours. That's why I say it's not real fast. Because of the setting to let the flavors meld.

I suppose you could warm it up, but I just eat it straight out of the bowl. Like it's salad or something.

Sprinkled a little shredded parmesan on it one time. Added a 4 oz can of chopped mushroom pieces once.

If you have an Air Fryer a BLT sandwich is quick & easy. Tomatoes are really fresh & good this time of year and 8 minutes @ 380 deg in an air fryer will give ya a couple of crisp bacon sliced. Hard to beat a BLT...
