Need Potato Salad Help for My Dad’s 70th

I'm looking for some tips on making a potato salad for my dad's 70th birthday. They're serving burgers, so I want something that goes well with that, but I'm not super confident in my potato salad skills. If anyone has a favorite recipe or a special twist that can elevate it, I'd love to hear it.

Also, any advice on keeping mayo-based salads cold at outdoor parties? Trying to avoid any potential food safety issues here. Thanks for any help!
 
For keeping it cold, that's hard to do in the summertime let along FL heat. You need to keep it covered -
I will make my tater salad in two aluminum sheet pans basically. I will fill one with water a day or two before and put it in the freezer - and basically you can set the other container that you make the potato salad into it. I will wouldn't let it go for more than 2-3 hours, but I'm just kind paranoid about that.

I also suggest considering making a version without mayo, as that is another way to avoid it.
I've roasted the potatoes, used bacon, lemon juice, fresh dill, and little blue cheese for like a german potato salad.

However my go to is, red potatoes, egg, bell peppers and mayo. I personally like mine served warm, but hard to do if you're going to a party.
 
Red Skin Taters, cut in small chunks and boiled, cut out any bad spots, but do not peel completely.
Couple of boiled eggs, chop the whites, mash the yolks (cook the eggs with the taters)
A couple of squirts of mustard
Lots of mayonnaise
A few spoonfuls of relish of your choice, Wickles is good.
Chopped green, red, orange, and/or yellow peppers
Chopped onions or scallions
A few drops of your favorite hot sauce, Tabasco, TX Pete, etc.
Cajun seasoning to taste

Mix all the above thoroughly

Sprinkle more Cajun seasoning on to for color

Adjust all ingredients depending on how many taters you cook,.2# , 5#, etc.
